It is produced from by-products of wine (marc and lees) by Distilleria Bertolino S.p.A. and I.C.V. S.p.A. in their respective plants.
It is a key product for the group.
From the processing of wine-lees alcohol is obtained together with calcium tartrate which is packed in big bag and sent  to I.C.V. S.p.A. for the processing and transformation into Natural tartaric Acid.
Calcium tartrate appears as a grey powder with different degrees of colour, from pinky to brown, from grey powder to black, depending on the by-product’s origin. Production of calcium tartrate is more located in countries where there is an high wine production and it is mainly for this reason that Gruppo Bertolino has invested in Italy which is considered to be one of the major wine producers in Europe.
